High-quality soy sauce made by using whole Japanese soybeans, unlike the competition. The sauce contains also wheat and sea salt, and is brewed for a long time and then matured for over a year. It has a slightly sweet and natural soybean flavor. It is a product that can be used in a variety of dishes. Most soy sauces use alcohol as a preservative, but Akane soy sauce is a completely additive-free, naturally brewed product.
About 80% of soy sauce produced in Japan is made from soybean residue that has been pressed into oil (mostly from foreign GM soybeans), therefore soy sauce containing whole soybeans is viewed as a luxury product in Japan.
