This is a workshop where you can learn the basics of authentic Japanese cooking.
This time's theme is “Shojin Ryori” a Japanese vegan cuisine.
Shojin ryori is a cuisine made only with plant-based ingredients such as vegetables and tofu. It originated as a meal for monks who follow the precepts of Buddhism, and some families still prepare it as an Obon offering. Recently, it has also attracted attention as a healthy food.
There are two main types of ingredients that cannot be used.
The first is animal ingredients. In addition to meat, seafood, and eggs, dairy products such as butter, cheese, and milk are also derived from animals, so it is basically best not to use them.
The second is a vegetable with a strong smell called “Gokukun”. It refers to members of the green onion family, such as garlic, chives, green onions, rakkyo, and nobile, and is prohibited as it arouses lust and anger.
