These are extremely luxurious 100% buckwheat noodles made from buckwheat core flour (Sarashino powder), which is made by polishing the grains in a similar way as rice is being polished. The outer part of the grains is grinded to a powder and discarded, thanks to which the pasta acquires its bright color, unlike other types of soba. This product guarantees the full aroma and sweetness of buckwheat with a wonderful, typical for soba texture. This is Yamamoto Kajino's masterpiece.
Due to the fact that this product is 100% soba, water after cooked pasta, the so-called "Soba-yu", which is packed with nutrients, can be used to create a simple bouillon ("Soba tsuyu") by adding dashi and soy sauce.
A method of preparing:
Cook for 6 minutes. Drain the pasta then rinse it with cold water. The water left in the pot after cooking the pasta can be used to make the broth.
Soba, like udon, can be served cold ("Zaru soba") or hot ("Kake soba"), and since buckwheat does not contain gluten, this pasta is gluten-free.
