Sakae Shoyu Tamari Soy Sauce (Premium Natural Soy Sauce)
Founded in 1795, Sakae Soy Sauce is a fully artisanal soy sauce brewery in Kakegawa, Shizuoka Prefecture, with more than 200 years of history.
Only carefully selected Japanese soybeans and wheat, natural salt, and water are used in production. The soy sauce is slowly and naturally brewed in cedar wooden barrels that have been passed down through generations. Fermentation and aging follow the changing temperatures of Japan’s four seasons, while microorganisms living in the brewery and wooden barrels give Sakae soy sauce its distinctive flavor, aroma, and color.
Masuhiro Fukaya, the seventh-generation brewer, has protected this tradition by continuing to brew soy sauce in traditional wooden barrels even as the industry became increasingly mechanized. At the same time, he has introduced new techniques while combining them with craftsmanship and knowledge passed down through generations.
Tamari is a rich and intense soy sauce made almost entirely from soybeans. Its high soybean content gives it deep umami, a distinctive aroma, and a more concentrated flavor than regular soy sauce.
It pairs especially well with sashimi, particularly tuna and other strongly flavored fish. It is also excellent for dishes such as buri teriyaki, where a rich flavor, deep color, and beautiful glossy finish are desired.
